Tucson is a hotbed of small, entrepreneurial restaurants, that operate out of a trailer, cook using propane, and keep the food cold in an ice chest.  To me, that's my kind of restaurant, and Taqueria Los Cipilones is a restaurant that definitely fits that description.

Photo:  Taqueria Los Cipilones is located in a dusty lot, and features covered, outdoor "patio-style" dining.  The food is cooked inside the small trailer, using a propane-fired griddle.  Today happens to be Monday, April 28, 2014.

Photo:  Looking toward the kitchen from the patio.  The sodas and garnishes are kept on ice, in the ice chests.  If you look in the background of the photo, you can see Hot Dogs Los Chipilones, where I enjoyed dinner last night.

Photo:  There is no electricity at Taqueria Los Cipilones, so all soft drinks are kept on ice, in an ice chest.

Photo:  Condiments include key limes, three varieties of salsa, and thick guacamole.  I garnished my tacos with guacamole, and it turned out to be some of the best guacamole that I've enjoyed during my visits to Tucson.

Photo:  I surprised Carlos by opening the door to the kitchen and snapping his photo, as he turned around.  Tripe is cooking on the griddle.  Carlos was very friendly, and didn't object to me taking photos.  I truly like friendly people!

Photo:  My tacos de tripas arrived from the kitchen on two perfectly toasted corn tortillas, and garnished with finely diced cabbage.  Actually, I've never seen cabbage like this, as it's usually shredded, but the cabbage made a great foundation for the guacamole.

Photo:  My tacos de tripas, all decked-out with thick guacamole, and a couple of key lime slices.  These tacos were simply delicious!

Absolutely fabulous!  That's my description for the tacos de tripas I enjoyed at Taqueria Los Cipilones.  If you're in the mood for a delicious tacos, and some of the best guacamole in Tucson, look no further than Taqueria Los Cipilones.
