We love breakfast, and we especially love breakfast, Mexican style.  We share with you some of our favorite recipes for an authentic brakfast, Mexican style.


Huevos Rancheros:  A traditional Mexican breakfast or brunch favorite, this is a recipe that everybody loves!

Huevos Rancheros, en Estillo de Rancho Meling:  Back in October, 2007, I enjoyed a visit to Meling Ranch, and I spent time in the kitchen, and learned how to make Huevos Rancheros on a wood-fired kitchen range.

Huevos Rancheros, again:  There are endless variations to making Huevos Rancheros, and this recipe is a favorite at our house, as it's simple and delicious.

Fried Eggs, Refried Beans, Bacon and Tortillas:  This has to be my all-time favorite Mexican breakfast; this combination breakfast is very popular all over northern Mexico.

Fried Eggs, Cowboy Beans, Bacon and Tortillas:  Another favorite breakfast of northern Mexico, I've enjoyed this breakfast many times during my travels to northern Mexico.  Note this recipe uses Cowboy Beans...

Bean Tacos:  If you're a vegetarian, this recipe will bring a smile to your face, but if you're like the rest of us, you'll love this simple, quick, and easy to make recipe for a delicious breakfast taco.

Menudo:  Tripe soup for breakfast?  Yes, this is a very popular breakfast dish, especially after a hard night of drinking, as menudo is speculated to be the cure for any hangover.

Posole:  This pork and chicken soup is a breakfast favorite in northern Mexico, especially in the state of Sonora. It's especially delicious when served with warmed corn or flour tortillas.
