It's an early October Monday afternoon, and what could be better than to enjoy a dinner of menudo?  Yes... it's a favorite dish south of the border in Mexico and a favorite of mine.

Photo:  It's Monday morning, October 22, 2022 and I've got the Instant Pot going with menudo on tap for tonight's dinner.  The tripe had already been smoked, and the broth was pulled from the freezer, so it was a simple matter to throw it all into the pot and enjoy for dinner.

Photo:  It's all good if you're a fan of menudo.  I made everything from scratch, and the only really easy thing I did was cook the soup in the Instant Pot.  Other than that... it's "old school" menudo, any way you look at it.

Photo:  A bowl of menudo, toasted corn tortillas, along with diced jalapeno pepper and white onion... does dinner get any better?

Photo:  A toasted corn tortilla or two makes for perfect dipping into a bowl of menudo.  I toast my corn tortillas directly over the gas burner on my kitchen range, exactly the way it's done in Mexico.

Photo:  The next day... I found myself with lots of avocado on hand, so it seemed like a perfect day to toast guacamole between corn tortillas.

Photo:  My Jim Beam "Burger Hat" came in handy as I made a guacamole tostada on the kitchen range.  I simply used a frying pan, and pretty much toasted the avocado and tortillas the way it's done in Mexico.

Photo:  After adding a bit of Mexican cheese, it was time to enjoy avocado and cheese tostadas.

Photo:  I was favored to have leftover avocado, so I made guacamole and enjoyed it with corn tortilla chips, homemade... naturally!
