Pork, fresh corn on the cob, Russet potato, slice of white onion and a jalapeno pepper?  What could be better to grill on a late Sunday afternoon in October?

Photo:  It's late afternoon, Sunday, October 09, 2025, and I've fired up my Weber "Smokey Joe" grill for tonight's dinner.

Photo:  I use locally gathered oak wood, as it grows everywhere in western Placer County and it makes great fuel for the grill, as oak wood is very similar to hickory.  For added flavor to the barbecue, I've added onion pieces, which is a trick I learned from my travels to Mexico.

One of the keys to a great meal is to keep the grill clean, and that's a ritual that's part of every grilling session I do.

Photo:  I open the grill, and I'm a happy guy, as I show off tonight's dinner, which is almost ready to remove from the grill.

Photo:  Oh yeah!  Grilled pork ribs, potato and corn... there is nothing better in this world.  Yellow squash and a jalapeno pepper on the side help to make the meal complete.

Photo:  Grilled pork ribs, smoked using locally gathered oak wood, make for a dinner sensation.  On this grilling session, I didn't use any marinade or barbecue sauce, as I simply rubbed the ribs using Pappy's "Blue Label Rub," which is my go-to rub.  

I grew up with Pappy's, as it's produced in Fresno, CA, which is my old "stomping grounds..."
