Sabores de Mexico is a small, family-owned and operated pop-up Mexican restaurant, based in Lincoln, CA, that offers delicious food and catering at special events.  This year, they set up shop at the Lincoln Regional Airport Open House, and served delicious Mexican cuisine during the event.

As with all of reviews that I publish, I have no affiliation with the restaurant reviewed, and there is no monetary gain on my part, as I am simply a person who likes to eat, and I love to write-up, and publish my dining experiences.

Photo:  It's a little past 07:30 in the morning, Saturday, August 26, 2023, and I'm enjoying the 2nd Annual Lincoln Airport Open House, located at the Lincoln Regional Airport, in Lincoln, CA.  The event opened an hour earlier, and shortly after the event opened, Sabores de Mexico began serving their fine Mexican cuisine.

Photo:  At Sabores de Mexico, I was greeted by this friendly lady, who will take your order with a smile.  The restaurant seems to prefer payment using your phone, as they have an application all set up for your payment.  I handed her a $10-spot for payment of my order, and she was more than happy to take my cash.  High tech?  I prefer cash...

The format is you place your order, and pay for it at one window, and you pick you order up at second window, just to the right of the order window.

After I placed and payed for my order, I was given this little buzzer thing, about the size of a small iPhone, and when my order was ready, it would beep and flash.  She said my order would be ready in about five minutes, and true to form, about five minutes after I placed my order, this thing started beeping and flashing.  I went to the pick-up window and picked up my order.

Photo:  After placing my order, I walked around to the side and watched a chef grilling carnitas - some for my order - on a griddle.  All orders are fresh, and made after ordering from fresh ingredients.  This isn't pre-cooked food, as your orders are prepared by the talented staff after you place your order.

Since the pop-up restaurant is housed in a tent, which the exception of the order or pick-windows, photos have to taken through the screen mesh.  

Unfortunately, the restaurant doesn't have a web or Facebook presence, and I have no idea how they schedule their gigs.

Photo:  From the simple "Menu" listed on the blackboard, I went at the "top" and ordered "#1 Three Tacos."  Such a great breakfast on this early Saturday morning!

For your meat, you get to choose between asada (steak,) pollo (chicken,) or carnitas, which is seasoned, shredded and grilled pork.  If you order "Everything" as toppings for your taco, you'll be treated to diced white onion, chopped cilantro, sliced radish, a dash of salsa verde, jalapeno pepper slices, along with quartered lime.  As an added bonus, my tacos arrived with sliced, pickled carrot, which is a very popular add-on in Mexico.

The tacos served at Sabores de Mexico are Mexican "street tacos," served on two small, toasted corn tortillas, and are identical in every way to the countless tacos I've enjoyed on my many trips to Mexico.  These are the type of tacos you'll find on the streets in nearly every Mexican town or city.  Muy sabroso!

Each taco began with two small, toasted corn tortillas, and was loaded with a generous helping the marinated, juicy and perfectly grilled carnitas.  Diced white onion, chopped cilantro, jalapeno slices, along with a touch of salsa verde were placed on the tacos, with the radish, carrot and lime placed on the side.

One bite into my first taco instantly transported me to the streets of Mexicali, as I've enjoyed countless identical tacos during my visits to that fine city.  The tortillas were perfectly toasted, soft and chewy, and held together so you could enjoy the combination of delicious ingredients with every bite.  The carnitas - pork meat - was simply delicious and nearly melted in my mouth with every bite.  The veggies were crisp and fresh, and truly enhanced these delicious tacos.

I can truly say these tacos were simply amazing!  I highly recommend enjoying the fine cuisine at any event were Sabores de Mexico sets up their restaurant.

The delicious, authentic Mexican cuisine is served by friendly staff, and is very reasonably priced.  Look for Sabores de Mexico at the next special event in Placer County, and the greater Sacramento area.
