Michael's "Easy Vegetable Beef Soup" is perfect for a quick, easy meal, and is the perfect "comfort food" for a laid-back evening meal at home.

 Special Tools:  Cast iron pot or crock pot
Preparation time:  About 15 minutes
Cooking Time:  4 - 6 hours
Yeild:  4 - 6 servings

1 lb beef stew meat, cut into small cubes
1/2 medium onion, diced
1 can tomato sauce, 6-oz.
2 cans beef broth, 16-oz
1 bag mixed vegetables, 16-oz
1 can new potatoes, diced
1/2 teaspoon black pepper


Cut stew meat into small (1/4" to 1/2") cubes.  Brown, with onion and place browned meat into cast iron pot, or crock pot.

Cut vegetables into smaller pieces, if necessary.  Stir in all remaining ingredients and simmer on low heat on the stove, or in a crock pot for 4 to 6 hours.

Michael tells me that he made this simple "throw together" recipe during a winter weekend visit to a friend's cabin.  He says that everybody really liked the  recipe.  There's nothing like a hot bowl of soup on a snowy, wintry evening!
