"Italian pizzeria infused with Mexican flavor..." that's a combination that you don't often see, but it's the motto of Coyote Pizzeria, as headlined on their website. Over the last several years, Coyote Pizzeria has become a favorite of Auburn, CA locals, and all pizza lovers who look to enjoy one of the best pizzas in all of Placer County. In the words of restaurant co-owner Jackie, "It's all in the dough..." As with all of reviews that I publish, I have no affiliation with the restaurant reviewed, and there is no monetary gain on my part, as I am simply a person who likes to eat, and I love to write-up, and publish my dining experiences. Photo: It's a little past 14:30 in the afternoon, Saturday, May 23, 2026 and I've arrived at Coyote Pizzeria, located in historic old town Auburn, CA to enjoy one of the finest pizzas served in Placer County. The restaurant is located partly below ground level, under Old Town Grill, a fine breakfast and lunch restaurant. Prior to Coyote Pizzeria, the building housed Old Town Pizza, which moved to a new location at the east end of High Street. Restaurants in old town Auburn can be dynamic! Photo: As you enter the restaurant, you'll pass through the first dining room, which has a sports bar atmosphere and almost reminds me of a vintage speakeasy. My hostess, Cali, pours me a pub size glass of Knee Deep Brewing Company - a Auburn local microbrewery - "Breaking Bad." It's a smooth lager, and goes exceptionally well with pizza!

I asked for "everything" in my salad, so I enjoyed fresh Romaine lettuce, tomatoes, red onion, cucumber and chopped olives. My choice of dressing was "Ranch," which was an excellent choice, as the dressing is made in-house, so it's fresh and delicious, which made a great compliment to this fine salad. As an added bonus, this isn't your mamma's little salad, as this may be a "side salad," but it was quite large, and if you added some chicken or cheese, it could work for a complete and healthy lunch. As my pizza was being prepared, Cali and I chatted about many things, including this website, my Facebook group "Gold Country Dining," food in general, and pizza. It was a pleasure chatting with her! Photo: Say, that's a beer! I toast my hostess Cali, Chef Hugo and all the fine staff at Coyote Pizzeria, located in historic old town Auburn, CA. I can't wait to enjoy this fine pizza, complete with the delicious blend of melted Mozarella and Mexican cheese. Photo: From the top of the "Pizza" section of the menu, I went with the "Coyote Supreme Pizza," as it's the signature pizza of the menu, and it's loaded with many delicious toppings. The menu lists this delicious pizza as, "Red tomato sauce, Canadian bacon, salami, pepperoni, linguica, mushrooms, red onion, green bell pepper, sausage, black olives and bacon." Co-owner of the restaurant, Jackie states, "It's all in the dough," and that translates to the crust, and Chef Hugo nailed the crust. There is a single word to describe the crust: Perfect. The crust was golden brown, baked crispy on the outside, yet somewhat chewy and tender on the inside, and held together well. The pizza was brushed with melted butter, which complimented the somewhat sweet taste of the dough. The foundation of every superior pizza is the dough, and this pizza's delicious dough foundation was a stable as the Rock of Gibraltar, which got the pizza off to an amazing start. The perfectly baked dough was coated with red tomato sauce, definitely Italian, but I could taste some Mexican influence, which made this sauce unique. The gooey, melted cheese was a blend of mostly Mozzarella, but like the sauce, it had influence from Mexico, as the blend included some Mexican cheese, which made the taste of the cheese unique. Oh my, if all you were interested in was a cheese pizza, the crust, sauce and cheese would have been a winning combination. My hostess, Cali and I had discussed pizza while my pizza was being prepared, and she mentioned one of the things that made their pizza stand out from the crowd were the toppings, as Coyote Pizzeria sources fresh ingredients, that are as local as possible. I believed her, but after my first bite, the freshness of the quality ingredients was confirmed, and I instantly fell in love with the "Coyote Supreme Pizza." With my first bite, I was rewarded with a slight "crunch," thanks to the perfectly baked crust, along with the sweet, buttery flavor of the crust. Then the zesty, red sauce, the tangy cheese, and all of the amazingly fresh toppings... it added up to a cornucopia of flavors. Honestly, this was one of the BEST pizzas I've eaten since I can remember, and that's saying a lot, as I typically refrain from using adjective superlatives. I ordered a "Personal Size" pizza, which is eight inches in diameter, but thanks to the wide array of toppings, along with the "Side Salad," I ended up full, and I brought half of it home to enjoy for dinner. The "Coyote Supreme Pizza" is a work of art that will bring a smile to all pizza lovers in the greater Sacramento area. My "Coyote Supreme Pizza" was simply delicious, and is one of the best pizzas that I've eaten in YEARS. That's a BIG statement to make, but there is no other pizza like Coyote's in Auburn, Placer County, or the greater Sacramento area, as this pizza simply blows other pizzas out of the water. This pizza is simply delicious! Coyote Pizzeria is truly a destination for all who appreciate a superior, top-shelf pizza.
