Monday, April 21, 2014, it was a lazy day around our house, so dinner was lazy as well. Nothing like grilling pork and potatoes to spice-up a lazy Monday evening... Photo: Pork, squash, pasilla pepper, and Yukon Gold potatoes are cooking on our outdoor grill. Photo: Just off from the grill, the veggies and meat are cooling, before I can cut them into bite-sized pieces, and arrange them on a plate for dinner. Photo: Dinner tonight, Monday, April 21, 2014... Grilled pork, with Kansas City style barbecue sauce, Yukon Gold potatoes, yellow squash, pasilla peppers, with lots of salsa "La Cuacamaya con Limon," imported from Mexico. Photo: Two days later, on April 23, 2014, I marinated pork and grilled corn tortillas, as the idea on this Wednesday evening was to enjoy tacos. I grilled the pork, and the corn tortillas on the grill, which worked out well. Photo: Two pork tacos, along with corn tortillas, cooked on our Weber grill, outside on the patio. We smoked the pork with hickory; perhaps we should have used mesquite? Garnishes is homemade salsa cruda. Oh yes, the meal worked out great! Copyright(c) 2014 eRench Productions, Inc.
