Many small Mexican restaurants in California include Birria de Res on their weekend menu, but how many actually feature chivo (goat) as the meat in the stew? Yes, most recipes call for a blend of pork and beef, but if real, down-home birria is desired, goat meat is mandatory. During my visits to Mexico, when I see a small taco stand or restaurant that advertises birria, I usually inquire as to if the meat is "chivo," and if it is indeed goat, I'm a customer. Such was the case on Sunday, September 29, 2007, as I was passing through the Col. Punta Banda district in beautiful Ensenada, on my way south, that I came across Birrieria Rossy, and yes, the birria included goat meat. Instantly, I was transformed from a looker to a customer! Note the diminutive size of the restaurant and the customers enjoying a fine meal of goat stew. Birrieria Rossy is located at the corner of Av. Dr. Pedro Loyla and Calle Granito, on the south side of the charming port city of Ensenada, on the sidewalk in front of a lovely municipal park, and birria is their specialty, but they also sell tacos, sodas, and jugos. One item that caught my attention from their hand-printed menu was "jugos de carne," why didn't I ask Rossy what that was? It literally translates into English as "meat drink" ... what could that be? Rossy's is located in a small, wooden building, where the front awning doubles as a cover, and folds down when the restaurant is closed to secure the business, and the whole building is about the size of, and reminds me of one of those plywood concession stands at a Little League baseball stadium. The restaurant is very compact, but it has everything, including a refrigerator, range, griddle, sink, work counter, and storage. Dining is very simple, as customers sit on a bench at the work counter, and there is room for about three people to sit. Birrieria Rossy is owned and operated by a young lady who happens to go by the name of Rossy, who was working the restaurant the day of my visit. As much as I like to chat, I really didn't get the opportunity, as business was booming; birria is a popular dish favored by Ensenada locals on a Sunday afternoon, so she didn't really have a whole lot of time to chat. I could see that the stew is made at the restaurant, as there was a big pot of it on the stove, and in between customers, she was chopping meat, preparing vegetables, toasting peppers, and doing all of the things necessary to put together a pot of birria. I sat down at the bench, along with a local couple, and ordered a birria "chica" for MEX $35.00. The delicious bowl of goat stew includes a stack of six, in-house-made corn tortillas on the side, but its really all-you-can-eat tortillas, as there's no charge for additional tortillas, what a deal! Condiments included red salsa, diced white onions, cilantro, chopped cabbage, and key limes. I've already added shredded cabbage, chopped white onions and cilantro to my bowl of birria. Talk about an enjoyable experience, to savor a delicious bowl of birria, at a small, loncheria, sitting next to a local couple, and helping myself to all of the freshly made, delicious corn tortillas that I could stuff into my mouth. Rossy's birria is very tasty, earthy and spicy, yet not hot, and its just plain delicious. The tortillas are still warm off the griddle, and the condiments are fresh, and the company is excellent. If you're in the mood for a delicious bowl of birria, and a unique Ensenada dining experience, I highly recommend Birrieria Rossy! Birrieria
