Two guys selling roasted corn, from a mesquite-fired corn cart on a busy street corner in downtown Ensenada, Baja California... it just doesn't get any simpler!
Photo: The Corn Guys operate after dark, almost every evening, on a busy street corner in downtown Ensenada. It doesn't get any simpler, than a cart that is pushed by hand, a mesquite-fired grill built in a large, galvanized tub, another tub to store fresh, uncooked corn, and a cutting board, which serves as a counter to store condiments. I assume the electric light uses electricity borrowed from the 3 Hermanos Zapateria, which is located to right of the photo.
Photo: The corn guy told me that they use mesquite charcoal to grill the corn. Note the low-tech method used to keep roasted corn warm, by placing the stalk through the grill, but keeping it far away from the heat just to stay warm, and not cook. Clever! If you choose, you may enjoy a variety of condiments on your roasted corn, including salt, a couple varieties of picante sauce, mustard, honey or powdered sugar.
Photo: I hold my ear of grilled corn, that I cost less than a dollar. Note the sanitary paper napkin, that the guy uses to handle the corn; it also helps to keep your hands clean, especially if you choose to slather powdered sugar and picante sauce on your corn, like the locals prefer. I prefer my corn au natural... Naturally, the business doesn't have a name, as it's about as low-tech, and low-budget as it gets. But, I love grilled corn, and I love to enjoy food prepared on the street, by small, home-grown entrepreneurs like these guys.
