Saturday, December 28, 2024 sounded like a great evening to enjoy a dinner of stir-fried "Pink Salmon" fillet, accompanied by stir-fry vegetables, fried in my electric wok. Photo: I'm a happy guy, as my deep fried wild Alaskan salmon is ready to remove from my electric wok. Next came the stir-fry veggies. I acquired this wok from my wife when we got married back in 1997, as she never liked it, and it's still going strong! Don't even ask me the brand, as the tags have long ago disappeared, along with my memory. Photo: Two small fillets of "Alaska Pink Salmon," gifted to my from my fiend Dan Weir, made for perfect fried fish. I simply seasoned the fish using Pappy's "Blue Label Seasoning," and rolled them in masa harina to give them a light, earthy crust. I used peanut oil for frying, as it has a high flash point, which makes it ideal for stir fry. Photo: The stir fry vegetables were simply a one-pound package of veggies I purchased at our nearby supermarket. The veggies were broccoli, carrot, red bell pepper, sweet peas and asparagus. I prefer homemade stir fry sauce, but you could use the kind your grocery store sells in a bottle. I made my sauce from scratch, using a recipe I found online called "The BEST Stir Fry Sauce," and I agree with the title, as it's a winner in every way! It's easy to make from common items that you most likely already have in your pantry. The recipe calls for chicken stock, I used homemade chicken broth for added flavor. Also, you could use powdered ginger or garlic, but please don't... as using fresh garlic and ginger makes a world of difference. Use a cheese grater to grate the garlic and ginger into small pieces.
