Soups and stews are a staple of Mexican cuisine for good reason, as they're healthy, easy to make, delicious, efficient, and they're a good way to consume leftovers, as Mexican cooks utilize everything, and leave nothing to waste.  (We do the same thing in our household...)  Yet how many Norteamericanos have had the pleasure to eat a good Mexican soup?  Yes, soup is a breakfast favorite in Mexico!


Posole:  This delicious, earthy stew utilizes leftover turkey or chicken, and also includes pork, carrots, squash and hominy.  Real Mexican confort food!

San Felipe Style Menudo:  I've eaten menudo since I can remember, and there are endless varieties, but this recipe mimicks menudo that I've had the pleasure of eating in San Felipe, Baja California.

Chipotle Menudo:  This menudo is redder in color, richer in flavor, and features a smoky taste, thanks to the chipotle chilie peppers and the liquid smoke.  This is my favorite menudo recipe.

Tony's "Killer" Tortilla Soup:  This recipe was given to me by a co-worker, and it truly makes some of the best tortilla soup that you've ever tasted.
