Kansas City style barbecue sauce is the Constantinople of barbecue, where pork meets beef, and vinegar meets tomato, where sauce is spread on the meat, and where its served as a side dish. Bottled Kansas City barbecue sauce is good, but when you make it yourself, a good barbecue sauce morphs itself into a great bbq sauce! Special
tools: Cast iron frying pan, but any frying pan will work

tablespoon soy sauce Heat olive oil in cast iron frying pan. Add onion and cook over medium-high heat, stirring every minute or so, until translucent; about 4 minutes. Add miced garlic and cook for an additional minute. Add remaining ingredients, including Tabasco or picante sauce, and bring to a boil and boil all ingredients together for about 30 seconds. Reduce heat to low and simmer for 10 minutes, while stirring mixture every 2 minutes.

Right: All ingredients are mixed together and are cooking on the stove. If you cook the onions just right, this barbecue sauce will have a little bit of "crunch" which is something that you won't find in the bottled stuff that you purchase at the grocery store. Sure, many times I use the bottled sauce, as it has preservatives and it will keep in the refrigerator for several weeks. However, if you're anticpating a meal, event or whatever that requires a finite amount of Kansas City style barbecue sauce, forget about the bottle and make your sauce using my recipe.
