Hot dogs are seriously underrated, as most folks associate them with one of those boiled things that you buy at Dodger Stadium, or one of those burnt things that your dad used to grill at the yearly church picnic or Boy Scout cookout...  Look at the plain, ordinary hot dog in a different light, as I will show you how to grill them to perfection and you'll take an ordinary, tasteless or burnt hot dog, into a culinary delight.

Special tools:  Grill, indoor or outdoor
Preparation time:  About 5 minutes
Cooking time:  About  4 minutes
Yield:  2 hot dogs; one serving

2 large hot dogs, I prefer John Morrell brand, but any hot dog will substitute
2 hot dog buns, any brand
Mustard and mayonnaise, to taste

Garnishes to follow:

Roma tomato, diced
Green jalapeno pepper, diced
Red jalapeno pepper, diced
Onion, white, diced; any variety will substitute
Cheese, Kraft Mexican Four Cheese, but any shredded cheese will substitute

This is not dad's hot dog, as its not burnt and not coated with burnt, gooey, barbecue sauce.  Instead, its grilled to perfection and sports attractive grill marks to prove its pedigree.  This hot dog has class!

Left:  Hot dogs and buns are grilling over high heat on my outdoor Weber grill.  Notice that attractive grill marks have appeared.  Right:  Plain hot dogs, with only mustad and mayonnaise added.  Although these dogs are very plain, they're still one step up from the boiled "Dodger Dogs."  Well, that's my opinion of Los Angeles, anyway...

Heat your grill to high temperature, which should be around 350 degrees.  Due to the short cooking time of hot dogs, wood chips aren't necessary.  When grill is hot place hot dogs on grill surface.  Cook for 2 minutes, or until grill marks appear, and then turn over.

Grill hot dog for one minute.  Meanwhile, while hot dog is cooking, place hot dog buns on the grill.  Toast one side of bun  for 30 seconds, flip over and toast other side for about 30 seconds.  The idea is to have bun toasted and grill marks to appear.

Left:  I've added diced tomatoes, diced red and green jalapeno peppers, and white onions to make this plain hot dog a gourmet dog.  Right:  I take the gourmet dog to the next level and add Mexican shredded Four Cheese.  Note that the bun and the hot dog sport attractive grill marks.

Remove buns and hot dogs from grill.  Garnish with preferred condiments.  Serve immediately.
