As I enjoyed my Monday evening meal, which was one of the most delicious meals that I'd ever had the pleasure to enjoy, Andrea Meling came up to me and asked if I wanted breakfast on Tuesday, and what would I want to eat for my meal?  Her question came as a surprise to me, as unless I'm ordering breakfast from a menu at a restaurant, I'm not used to somebody querying me as per my preference in a meal, and I'm not used to my whims being catered to.  Nevertheless, since she asked me what I wanted, I simply replied that I'd like any breakfast that featured eggs over easy, refried beans, and corn tortillas.  When she posed the question to me, I was thinking about one of the most delicious breakfast experiences that I'd ever enjoyed, at a very simple diner in Tijuana, a place by the name of Loncherķa Anita, which served a delicious breakfast of eggs over easy, hash browns, refried beans, and tortillas.  So for my Tuesday breakfast, I requested a very simple meal, consisting of eggs over easy, refried beans, and corn tortillas.

I woke up a little bit before 0700, took a shower, looked out the open screen door of my motel room (remember, Meling Ranch is ultra-safe; no locked doors are needed...) and inhaled the smell of fragrant wood smoke coming from the stove pipe, on top of the kitchen annex.  I dressed, and hiked over the kitchen, and found Andrea, Jicelia and Julie working in the kichen, preparing breakfast for me, the only guest at the ranch today, and the breakfast for the ranch staff, along with Andrea's uncle Manuel, who lives at a nearby ranch, Rancho El Coyote, about 20 km from Meling Ranch.  Naturally, I chit-chatted with everybody, and watched them prepare breakfast on their fantastic wood-fired kitchen range.  A huge pot of coffee was ready, and sitting hot on a back burner of the stove, so I just had to help myself, and relax in the kitchen, observe the girls making breakfast, and talk, talk, and talk, which is something that I'm pretty good at doing.

Andrea didn't bother to ring the breakfast triangle, as I was already in the kitchen awaiting breakfast, but Julie had already set the table for me in the dining room, so I chose to eat my meal there, rather in the kitchen with the staff.  Today, I was the only guest at Meling Ranch, but the staff custom-prepared my meal, and treated me like royalty.  However, my needs are simple, as I love everything, and I appreciate the work that goes into preparing an outstanding meal.

Meling Ranch will accommodate almost any dining request within reason for their guests, and my breakfast exceeded the simple request I had requested the previous day.  My Tuesday morning breakfast consisted of two perfectly fried eggs, over easy, delicious, freshly made refried beans, bacon, cooked just the way I like it, salsa, and a stack of corn tortillas on the side.  Drinks included coffee from the kitchen, orange juice, and cool water from the nearby spring that supplies the ranch with delicious mountain water.  Not to mention that the breakfast was served to me by friendly Julie, who even took a photo of me sitting at the table before devouring my delicious breakfast.

My plans for the day consisted of a visit to Parque Nacional San Pedro Martir, so a hearty breakfast was in order.  I certainly received my money's worth at Rancho Meling, as I received a delicious, custom-cooked breakfast, created and served by friendly people in one of the most beautiful places that I've ever visited in Mexico.
